This Blanc de Blancs consists of 100% Chardonnay, which gives the champagne freshness, elegance and minerality. Chardonnay is the only major permitted white grape variety in Champagne. 15-20% wines aged in oak barrels with weekly batonnage. No malolactic fermentation. The Cuvée Blancs de Blancs is brewed at low pressure to obtain a rounder, full-bodied sparkling quality. It matures in the cellar for an average of 5 years and is given a six-month rest period after disgorgement to put the finishing touches to its maturity. The dosage is adjusted for each vintage and is 8-10 g/l.
